The butter is melted. Can I still eat it?
Yes. Ghee is always melted-butter and it does not need to be refrigerated. Ghee will become solid once it is kept in the refrigerator.
What are the brown spots I can see on the bottom of the jar?
The ghee is cooked very dedicated to a high temperature, then using a triple filtration process, we filter out the milk solids (which is usually brown in color due to the cooking process.) Because it is artisan made, this results in various textures add extra toasty bits, which will vary jar to jar. It does not change the quality of the product.
How long does ghee last?
Keep product in cool dark, stable temperature area. Don't use dirty or wet spoons, the moisture need to be kept away in order to keep the quality of the butter. If you keep the jar clean it should last indefinitely. Once opened, it is also good for 6 months but we cap it at 60 days.
What is the difference between clarified butter and ghee butter?
Clarified butter is simply made by heating the butter and removing the milk solids which have risen to the top of the pot. In making traditional ghee, butter is made to boil and cooked until all the moisture is boiled off, and all the milk solids have settled to the bottom. These milk solids which have settled to the bottom of the pot have been intentionally been burned and caramelized, developing nutty flavor to the ghee. Ghee is the pure extraction of oil from the butter.
